AVIV is an unflavored vodka that retains the essence of its ingredients-wheat, barley, olives, figs, dates, grapes and pomegranates.
Yossi Gold, our master distiller, begins with wheat and barley distilled three times. To that he adds fruit alcohol distilled from a mash of olives, figs, dates, grapes, and pomegranates. He tweaked the quantities of the ingredients, along with the proportions of the alcohol, until he reached the exact flavor notes and strength of each he wanted.
The distinctive sweet finish of AVIV 613 comes from flavors that are not added to the vodka, but which evolve from the perfect blending of grain and fruit alcohol. Water from the Sea of Galilee, the lowest freshwater source in the world, contributes to it’s unique taste and smoothness.
Distilling AVIV more than 4 times removes too many of its natural flavors. We distill the grains 3 times and the fruits 3 times. The grain and fruit alcohol is blended and distilled 1 more time. Then AVIV goes through 6 filtration processes to make it ultra clean and smooth. Hence the name 613 (Hebrew reads right to left).

The fruits in AVIV are flavorful and delicate, especially the figs, dates, grapes and pomegranate seeds. That’s why it took so long to perfect our very special vodka. Anyone can add flavor to a product. AVIV is the result of years of development to create the perfect blend of grain and fruit alcohol. All of the fruits are grown in Israel on Kosher farms and orchards. “Kosher” means the production process is supervised daily by a specially trained Rabbi who inspects for cleanliness, quality, and also ensures that each grower of the grains and fruits offers 10% of its yield to charity.
Although AVIV is distilled partially from wheat, the gluten is removed in the distillation process. AVIV tests below the standard needed for a gluten-free claim.
AVIV has four Kosher Certifications: Badatz Chatam Sofer Petach Tikvah, Orthodox Union, Bedatz of Haifa, Bedatz of Tirat Carmel.
